Basil Pesto

 

2+ cups loosely packed fresh, washed Basil leaves and flowers

1 large clove Garlic (more if you like it)

fresh ground pepper to taste

1/4 cup olive oil

1/4 cup nuts (walnuts, pine nuts, almonds, or pecans)

1/2 cup grated Parmesan cheese

 

Combine all ingredients in a food processor or blender, adding enough olive oil to make a smooth, thick paste. Taste, then add salt, if desired.
